This 65% dark chocolate bar is filled with luscious marshmallow créme and coconut caramel full of toasted desiccated coconut.
120 -125g per bar. Each bar is hand-poured so expect some slight variation in weight. Crafted with Thai cacao.
Ingredients: Dark chocolate made with Thai cacao (65% cacao solids, cocoa butter, sugar), marshmallow (corn syrup, salt, eggwhite, citric acid, vanilla extract), coconut caramel (coconut milk, coconut oil, sugar, citric acid, glucose, vanilla extract & dessicated coconut)
Nat designed this bar to be reminiscent of an Almond Joy or Mounds bar (one of her favorite candy bars), but camouflaged it in her XN 65 craft chocolate couverture for a more grown-up appeal. Kokomo is the most intricate Badass Bar in the series, because it is the most candy-licious - therefore most demanding in confectionary skills.
Nat makes the marshmallow creme and coconut caramel separately, then carefully layers the two inclusions inside a 65% dark chocolate lined mold. Finally, the bar is capped off with more chocolate.
Production process: two different confections, bean-to-bar chocolate production, lining, filling and capping bars; or, four pours and three days of production to achieve final product. Phew!
