After two years of on and off development (seriously), I’m happy to reveal my latest vegan Thai inspired Badass Bar.
Larb is a Northern Thai salad that pops with flavor and freshness. It’s savory, herbaceous and has a special umami flavor that comes from the crushed up roasted rice mixed in with ground pork, fish sauce and rich, smoky chilis. It’s one of my favorites.
The Larb Me bar is a coconut caramel infused with a fresh medley of herbs used for larb, caramelized shallots and to keep the bar vegan — a house-made vegan fish sauce that (yes, true) provides the umami necessary to the larb flavor. The chocolate is 65% roasted rice dark coconut milk made with single origin beans from Chumphon and garnished with a vegan white holy basil chocolate (!!!).
The result? A big, rich, savory, umami, bold confection that is a must try. The roasted rice dark coconut milk chocolate is so swoon worthy and wrapped around that caramel, the result is something truly, truly magical.
The journey from idea to final product has a been a long one. I’ll be sharing that whole process later, but for now — LARB ME.
