Fresh passion fruit and ginger 65% dark chocolate single origin Chanthaburi ganache wrapped in the same chocolate and topped with shop candied lemon triangles.
Fresh lychee single origin Chumphon ‘unwhite’ chocolate ganache layered over lemongrass coconut white chocolate and wrapped in 70% single origin Saloy, Filipino chocolate and decorated with a strawberry coconut white chocolate.
So, let’s do a count! That’s four ganaches, three different couverture chocolates, two different fruit white chocolates for decoration, plus candied lemon. That’s TEN different chocolate processes, not including the tempering, paint brushing, molding, filling and capping. Is it any surprise that these took all week for me to complete?
